Écriture opened in April 2018 and was awarded two Michelin stars in the following year. Maxime Gilbert – former chef de cuisine at Asia’s 50 Best regular Amber – distinguishes his brand of French cuisine by utilising high-quality Japanese produce. His signature plate is the Hokkaido scallop and black truffle beignet, and he is also known for curing caviar in Rubia Gallega beef before topping it over a bone marrow soufflé. The space is lined by walls of books (‘écriture’ means writing in French after all) and offers city and harbour views.
