Analogue Initiative is remarkable on a few different counts. Firstly it is sister bar to Singapore's legendary Native (No.15 in The World's 50 Best Bars 2021), secondly its menu is entirely plant-based and thirdly its interior embodies the bar's sustainable ethos without compromising on style: its undulating aqua blue bar top is made from 1.6 tonnes of recycled plastic and is built to be accessible to wheelchair users. Head honcho Vijay Mudaliar has overseen an innovative cocktail list, with perfectly-balanced cocktails like the umami-rich Smokey Jerkey, blending whisky, palo cortado sherry, maple and smoked paprika garnished with mushroom jerky, or the smoky and fruity Cactus which mixes mezcal, prickly pear, pink dragon fruit, aloe vera, Pasilla chilli reduction, lime oil and a Tajín salt rim. The vegan bar bites are the stuff drinking snacks are made of too, with plant-based poutine, nuggets and tacos there to soak up the booze.
