From Mauricio Lopez, former head chef of Gustu, a regular in the Latin America’s 50 Best Restaurants list, and his school friend and fellow chef Sebastián Giménez, Ancestral opened in 2019 with the concept of highlighting Bolivian produce cooked on the wood-fired grill. While there’s a heavy meat focus featuring pure Bolivian ribeye beef steaks and succulent burgers, non-carnivores can also get their fill of flavoursome grilled trout or local paiche fish, while the grilled artichoke hearts are to die for. The wood-floored dining room is relaxed and spacious with views of the open kitchen on one side and, on the other, the garden from which the chefs will frequently pick fresh herbs for their dishes. There’s also a peaceful covered terrace for outdoor dining.
