Finnish chef Eric Räty combines French technique with premium Japanese ingredients at this nature-driven restaurant, which is designed to look like a forest. Two tasting menus of six or eight courses take diners through seaweed brioche with homemade smoky kombu butter, beef tartare with wasabi cream, carabinero prawns with tomato, and wagyu tenderloin. There are also a great value four-course lunch and brunch tasting options. Räty’s CV includes a stint as pastry chef at Aqua in Wolfsburg, a former mainstay of The World’s 50 Best Restaurants.
