There are few restaurants in the world – let alone in Latin America – which can boast a staying power and longevity as profound as Pangea. Since it first opened its doors in 1998 as a traditional French fine dining restaurant, the gastronomic institution has drastically evolved under the leadership and guiding philosophy of its indomitable chef, Guillermo González Beristáin, to earn its current reputation as a bastion of fine cooking in the continent.
Today, its former French identity has mostly vanished, with González Beristáin’s focus shifting to a contemporary outlook on Mexican gastronomy. Inside the restaurant’s softly lit dining room, adorned in exposed brick and flashes of elegant wood, guests are party to the chef’s three-course set menu or full nine-course degustation experience. In 2017, González Beristáin brought in head chef Eduardo Morali to bolster his kitchen and keep the restaurant at the forefront of the culinary arts – to great success.
Dishes across both menus play jovially with local produce and unearth deep cuts from Mexico’s culinary past, catapulted into the modern age. Think asado-grilled octopus with chorizo, peppers and a basil coulis, or a light soup of bayo beans with black truffle foam and black chilhuacle chiles. Each plate is a symphonic reflection of the modern Mexican palate. The restaurant rounds off its package with one of the country’s finest wine lists, with many bottles and vintages sourced from González Beristáin’s own vineyards in Mexico and southern France.
While its culinary offering may have shifted over its impressive lifespan, Pangea’s infallible service has remained steadfast and world-class. With age comes wisdom, and Pangea’s years of honing and fine-tuning are manifest to all diners who walk through the doors. Service is timeless and attentive with an astute attention to detail, retaining touches of the traditional French luxe hospitality that was introduced to its first diners in 1998.
In 2023, Pangea celebrates a triple-bill of impressive feats. Not only does it enjoy its 25th anniversary of opening, but also its 11th appearance on the list of Latin America’s 50 Best Restaurants, having featured on every ranking since its launch in 2013. The final piece of the puzzle? The coveted Gin Mare Art of Hospitality Award 2023, individually recognising the restaurant’s dining room as a culinary force of nature.
