Picture an Australian expat’s nostalgia for his ancestral home combined with the sort of technical skills that can only come from working at Mugaritz, Spain, one of the world’s most acclaimed restaurants, and you’ll have something of the brilliance of Basque Kitchen. The views from the light-filled dining room may be of Marina Bay and the theatrical skyline of Singapore’s CBD, but ingredients read more like the shopping list of chef Aitor Jeronimo Orive’s Basque grandmother: burnt cheese, oxtail and seafood delicately charred over a josper grill. Orive’s contemporary interpretation of his heritage is captivating and the beverage list is equally interesting, with a large selection from regional Spain including Alava, Valencia and Jerez.
