Menus delve deep into British gastronomy’s past, with dishes bearing historical dates and stretching back as far as the 14th century. The techniques that won Blumenthal The World's Best Restaurant award at Bray's The Fat Duck – smoking, pickling and the use of liquid nitrogen – are all present, but at its heart Dinner specialises in fairly simple British plates, cooked exquisitely.
