Hip bars and restaurants are springing up like mushrooms among the warehouses and railway tracks of arty Barra Fundo, but Komah is one of few that always has a queue. With its bare bricks and polished stone floors, this loft-style Korean spot wouldn’t look out of place in Brooklyn, a testament to the years chef-founder Paulo Shin spent honing his technique in New York City. Born in Brazil to Korean parents, food was one of the primary ways he stayed connected to his heritage. Great-value menus bob irreverently between nostalgic comfort food inspired by his mother and beautifully plated delicacies such as yukhoe (Korean steak tartare) served alongside a selection of ferments and preserves that changes daily and can be ordered as a set. A sophisticated cocktail list from celebrated bartender Vina Apolinário is heavy on soju and Korean botanicals such ginseng and sassafras.
