Founded on pre-historic principles – the menus here reference the restaurant’s Yucatán topography as resultant of a millennia-old meteor strike – the cooking could not be more diametrically opposed. It’s vibrant, contemporary and bang in line with modern gastronomy, as the team of chefs led by Pedro Evia use modern technique to push boundaries and bring bags of flavour. The setting brings further contrast, with the mansion it is housed in bringing centuries’ old grandeur and style, set near Merida’s Fatherland Monument. Both a la carte and tasting menus are available, though the latter shows the chefs’ skill to a greater degree. Expect dishes such as Yucatán lime soup, a mainstay on the menu since 2012, which is quickly followed by a Middle Eastern-leaning tabbouleh, labneh and Star apple. Meat courses are excellent, with a Creole suckling pig and lentil stew, brilliantly paired with slow-cooked beef tongue.
