Discovering Nikkei: There’s an à la carte menu for regular guests, but destination travellers should opt for the Nikkei Experience to really understand what Maido is about. Over some 11 courses including multiple snacks, the tasting menu explores the cuisine that blends Peru with Japan – think exquisite nigiri and tiradito slices, both made with the freshest catch of the day.
Welcome to Maido: In a large, open room in the Miraflores neighbourhood with high ceilings strewn with ropes shaped into the Japanese flag, the restaurant is a relaxed yet elegant setting where every guest is greeted with a hearty “Maido!” welcome.
Into the Amazon: Maido increasingly references ingredients and traditions from the vast Peruvian Amazon, with courses like the miniature jaune parcel of pork jowl and palm heart that nods to a rainforest staple, snacks of ‘ham’ made from sustainable paiche fish, and yucca served with Amazonian beans.
