Behind an unassuming wooden door in Tokyo’s Minato district is Matsukawa, an invitation-only, cash-only Japanese kaiseki (multi course) restaurant where a meal with no alcohol can set you back $320. With a waiting list of three months after initial introduction, the door swings open exactly five minutes before the 22-seater restaurant opens and guests are invited in by staff wearing black suits. Fish, including hair crab with sour gelatine and conger eel with dried sea cucumber ovaries, is prepared in front of diners by chef Tadayoshi Matsukawa, who trained in traditional Japanese cuisine at the two Michelin-star Seisoka, and his team.
