A new concept from Shuzo Nagumo, a rising star in Japanese bartending right now, Mixology Salon sits atop Tokyo’s tawny Ginza Six shopping mall and centres itself around tea. The tiny, minimal space, seating just eight, serves up what are being called ‘teatails’, focusing on flavours such as gyokuro, oolong and hojicha. These innovative drinks — think a Green Tea Old Fashioned — are available individually or in several-course tasting menus. Despite the delicate setting and glassware, the bar is relaxed and welcoming.
