His new venture includes a ground-breaking menu developed around the processes of fermentation and cold extraction. Against a backdrop of honey-hued stone walls and blonde wood, Sanchez’s dishes are works of art. Expect the likes of langoustine carpaccio with caviar and scallop with sea urchin – as you’ve never known them before. Cocktail bar Neso 2 opened in 2019.
