Bamboo screens and simple wooden furnishings reflect the ethos of Nusantra (meaning ‘archipelago’). This low-key fine diner from the team behind Locavore (an Asia’s 50 Best regular and the Best Restaurant in Indonesia in 2019) is a love letter to the culinary traditions of the thousands of islands that make up Indonesia. A kitchen team including chefs from Bali, West Java, Medan and North Sumatra create refined versions of rare regional plates such as snake fruit sambal from West Kalimantan. Pork belly wrapped in banana leaves and cooked in bamboo sits alongside braised jackfruit and fish sate grilled over charcoal. Exotic cocktails include plenty of native herbs.
