One White Street is what happens when two masters of their craft – Eleven Madison Park alums, chef Austin Johnson (also of Frenchie, Paris fame) and sommelier Dustin Wilson – knock heads to create a hybrid neighbourhood restaurant founded on the bedrock of farm-to-table eating. It’s set within the framework of a sleek 19th-century Tribeca townhouse – incidentally the address of John Lennon’s fictional land without borders, Nutopia – complete with homely, modern interiors straight from the pages of an interior design mag. Downstairs, a casual bar à vins space serves walks ins with a democratic menu – the likes of beef tartare with smoked oyster aioli, fennel-crusted duck and a keenly priced foie gras and pastrami plate with Parker house rolls and Dijon soubise. Meanwhile, upstairs, a six-course tasting menu informed by global technique and flavour profiles re-imagines fine-dining stalwarts. Witness corn cavatelli with yuzu pickled corn, mushrooms and puffed sorghum, stuffed chicken with charred brassicas and preserved lemon, and chocolate marquis with buckwheat waffle alongside an inspired smoked potato ice cream. It's all driven by heritage and seasonal Hudson Valley ingredients fresh from Rigor Hill Farm, which extends to a weekly farm stand – a burlap-bougie pantry powerhouse with many a celeb fan.
