How did it come to be? Tucked into the sand dunes of Uruguay’s most exclusive summer resort, three friends raised Parador La Huella’s wooden hatches in 2002. With the Atlantic waves practically lapping at its wooden foundations, this casual beachside diner has become a Uruguayan institution thanks to its delicious seafood-led menu that has holidaymakers come back for more every season.
All about the ocean: Given its prime coastal location, Parador La Huella is known for its stellar seafood. By working closely with local fishers, the restaurant creates a sustainable circle – expect to feast on cockles gathered from nearby Rocha, or taste Atlantic baby squid and octopus among many more maritime delights, served alongside organically grown vegetables.
In the kitchen: Vanessa González started out as a kitchen assistant on work experience at Parador La Huella not long after it opened. She has worked behind the burners ever since and has worked her way up, leading the team since 2015.
What’s in a name? La Huella translates as ‘the footprint’, encouraging guests to kick off their shoes or flip flops, traverse the sandy entrance barefoot and relax while dining.
On the menu: Lightly grilled, pan-fried, in tempura, sushi and ceviche, or simply fresh with little makeup: enjoy the catch of the day prepared in a variety of ways. Given Uruguay’s passion for beef, there’s also a strong hand in barbecued and grilled meat.
