République
Los Angeles, US
Raw brick walls, towering ceilings and mission-like archways: this buzzy eatery treats European heritage dishes and Californian ingredients with modern reverence. It’s a curious, history-rich spot, first built by Charlie Chaplin as an office space back in 1928, before housing Nancy Silverton’s famed bakery and Campanile restaurant from the late Eighties. Up front – and feeling more like a chic indoor market – is a café-cum-bar-cum-bakery with long, shared tables and butcher’s shop windows. Out back, a casually formal, wood-clad dining room puts the focus on chef-patrons Walter and Margarita Manzke’s easy-going, tempting cuisine. Prettily presented, their French-inspired menu is seasoned with pick-ups from the likes of Italy, Spain, Asia and Cali itself. Examples? Sonoma duck pâté en croute with pickled veg; charcoal-grilled Santa Barbara prawns with Normandy butter and Meyer lemon and Wagyu Zabuton with polenta and black truffle jus.
