Septime embraced a stripped-back interior before mismatched chairs were de rigueur, and this cultish bistro still sets the standard for contemporary eating in the French capital, specifically in the food-centric 11th arrondissement. Chef Bertrand Grébaut worked at Arpège, training under culinary legend Alain Passard, before opening Septime, where his food expresses a kind of micro-seasonality that keeps his diners on their toes.
