The flagship restaurant of one of Hong Kong’s most famous luxury hotel groups lives up to its location within the Peninsula by championing the very best Cantonese cuisine. Dim sum has been a daily ritual since Spring Moon opened its doors in 1986, around the time that it is claimed XO Sauce was invented here, and the faultless renditions of the classic dumpling repertoire make familiar dishes taste newly minted. The à la carte menus follow suit with superior ingredients given the most respectful of treatments (suckling pig seamlessly detached from a layer of unctuous fat) while innovative pairings and precise flavours prevent the classics from becoming stale. Sommeliers offer expert advice whether you’re drinking wine or an encyclopaedic selection of tea and although the atmosphere in the Shanghai-style art deco room can feel subdued, that’s just the way the many regulars like it.
