Sur Mesure par Thierry Marx

Sur Mesure is a minimalist white cocoon intended by designer Jouin-Manku to serve as a blank canvas for chef Thierry Marx's imaginative, Japanese-inspired reinvention of haute cuisine. Quite a canvas is needed to accommodate the chef's ambition. Since opening in 2011, Marx has wowed critics with such bold dishes as bean sprout and black truffle risotto in soy milk foam and ‘L’Oeuf Eclate’, a deconstructed hen's egg featuring yolk, scrambled albumen, parmesan custard, caviar and razor shell clams. Recent highlights include multicoloured octopus with capsules of roasted peppers, miso lobster, and lamb with asparagus, morels and roasted coffee.
