Follow your nose to Shanghai’s Yong Fu, which is a hit locally for its Ningbo menus – a native cuisine beloved for the likes of the pungent Ningbo San Chou (Three Smelly Street Foods), comprising smelly white gourds, smelly tofu and smelly amaranth. While the dining room is Golden Age Shanghai-meets-western in style – all aubergine-coloured walls, creamy linen and chandelier lighting – the food offering is specifically wild seafood netted in the East China Sea that same day, then expertly prepared. What’s available depends very much on the season: for Ninghai razor clams, say, time your visit to fall between March and May. Other hero menu items include a baby taro thick soup and stir-fried chopped swimmer crabs. Sibling restaurant Yong Fu Mini sells similar fare, but in a more casual setting, with lower entry-point prices. Ask your server if you’re unsure about the drinks order: it may be that a rice wine or cocktail will work better than a French wine.
