The flagship restaurant of Galway’s top chef JP McMahon, Aniar focuses on terroir cuisine from the west of Ireland. Through tasting menus of six to ten courses, it serves daily changing dishes that might include pork belly and pine with seaweed broth, fresh langoustine grilled over charcoal, potato with buttermilk, smoked eel and cured egg or confit pine cones in meringue. The names of all local suppliers are listed on the menu, and dishes are matched with wines and beer from all over the world. Aniar also operates a boutique cookery school.
