How can you not love a restaurant that describes itself on its website as ‘nestled between the church and a gay bar’? It’s a telling insight that while Galway might be picture-postcard Emerald Isle, Kai has an international, global outlook in tune with 21st-century Ireland. ‘Kai’ is the Māori word for ‘food’ and, since 2011, half Kiwi, half Irish couple Jess and Dave Murphy have brought a global approach to native ingredients, many organic and, where possible, wild: monkfish with New Zealand spinach, rope mussels and Madras broth, say, or Roscommon lamb chops with beetroot picada and green tahini. The mostly European wine list takes a similarly biodynamic and sustainable approach but the interiors are unmistakeably Irish: stone floors, chalkboard menus, cheery wooden furniture.
