The team at Balderdash take an almost culinary approach to seasonality, taking the best produce available and really running with it on the menu. For example, during strawberry season they partner with one of Denmark's best strawberry farms to create drinks like the ‘Strawberry-Foie Gras Old Fashioned’, which blends foie gras distillate, bourbon, strawberries and bitters. This extends to its ice cream selection, too – we're talking milkshakes, floats and unique flavour combinations such as truffle-hazelnut ice cream with banana and smoke, topped with black truffles and bacon salt.
