In contrast with many of the city’s traditional drinking establishments, Carico, led by pre-eminent bartender Dom Carella, offers a cutting edge yet laid-back approach to both food and drink. The interior is decidedly modern and open, with ivy hanging from the ceiling. The cocktail offering is thoughtful and elegantly presented, employing a variety of interesting ingredients and techniques, and with a focus on sustainability too. While the drinks list changes week to week, some cocktails have remained since the bar opened in March 2020, such as the signature Capsicum Funky, which epitomises Carico’s approach. An unassuming glass of clear liquid with a single block of ice contains tequila redistilled with jalapeño and white chocolate, as well as citric acid and clementine liqueur.
