Practically synonymous with the word ‘exclusive’, this decommissioned Victorian fire station and subterranean smoking lounge was, for a time, the most difficult place to secure a booking in London. While certain celebrities are still regulars, the hype machine has generally moved on, leaving behind an excellent yet informal restaurant. Portuguese chef Nuno Mendes – previously of Spanish legend El Bulli – emphasises seasonality and healthy eating. Trout crudo sits alongside roast brill with white strawberry and tarragon sauce while his signature crab donuts are as much of a talking point as ever.
