A surprise tasting menu is tailored to reflect each of the 30 diners’ preferences. Ceviche presented as a mosaic of textural cubes sits alongside interesting smoked dumplings with pickled onions and burrata. And a very traditional lasagne recipe is cunningly disguised as a donut.
