Singapore’s finest: Les Amis, the French translation of 'friends', is the sophisticated original restaurant of the Les Amis Group. In the 1990s, there was a dearth of independent fine-dining restaurants Singapore. On opening in 1994, Les Amis filled the void and has grown to become the ultimate French fine diner in the city state.
Who’s the chef? Sebastien Lepinoy, an alumnus of L’Atelier de Joël Robuchon Hong Kong and the now defunct Cépage in the same city. Lepinoy spent a total of 17 years with Joël Robuchon before he joined the Les Amis group.
Signature dishes: Classic Lepinoy dishes include Alphonso mango tagliatelle with pink peppercorn and vanilla rice pudding coulis; Kegani crab served with caviar and balanced with apples for subtle acidity; roasted wild turbot from the port of Île d'Yeu with printanière sauce; and spring rack of Aveyron lamb with sweet peppers and natural jus.
Artful hospitality: Lepinoy’s restaurant, winner of the Art of Hospitality Award in 2020, is an acolyte of guest-forward thinking. Diners are welcomed with the finest white-glove hospitality and every server – of cheese, truffles and caviar – has an exceptional knowledge of their respective field.
