Maison by Sota Atsumi

Tokyo-born chef Sota Atsumi made his name at Paris' much-lauded Clown Bar and has since moved on to his own venture, inspired by his long-held dream of having his own house in Paris. Maison has just over 40 seats, making for an intimate but not reverent experience as guests dine on set lunch or dinner menus created based on the market's best produce on any given day, with dishes such as salt-baked guinea fowl or a lychee pavlova with fig leaf ice cream. Tiling is a big motif throughout the dining room, with tiles on both the walls, floor and even on some of the tabletops with vaulted ceilings and additional seating up on a mezzanine level, but the main event is the open kitchen and its vast wood-fired oven where guests can watch Atsumi and his team at work.
