Named after chef Julien Royer’s grandmother, who inspired him to cook, Odette surged to the top spot in Asia’s 50 Best in 2019. Royer creates modern French dishes in the most refined way but with an Asian twist. The regularly changing menu highlights seasonal produce, occasionally recreating classics like pithivier and ballotine. The only mainstay is Royer’s signature pigeon, but the garnishes change along with the season. Odette, aptly located at the historic National Gallery, is fine dining as we know it – impeccable service, exquisite wines and dishes prepared with utmost dexterity – but without the stuffiness.
