On the minimalist, single-page printout that serves as the drinks list for Madrid’s Savas, it states “We make cocktails”, and they certainly do. There’s a simplicity to the drinks here – heavily based on the classics, with nothing too complicated or esoteric, and with presentation that is equally unpretentious. Take the Negroni Nordico, for example, which uses cranberry vodka and akvavit instead of gin, added to the standard vermouth and Campari, or the White Russian with Pimms. Everything about Savas is in keeping with this minimalist yet creative approach, from the unassuming exterior to the cute, airy interior. The bar is run by a Lithuanian couple with no shortage of experience in the bar industry, who have created a neighbourhood bar with effortless character and some excellent cocktails.
