A tropical paradise in the centre of Dubai, entering Amazonico feels like walking straight into a Latin American rainforest. The vast restaurant stretches over three floors, comprising a dining room, bar and lounge, dedicated sushi area and a stunning rooftop. Diego Sánchez is at the helm. Having worked alongside Latin America’s top chefs, including Gaston Acurio of Astrid y Gastón fame, and the Virgilio Martinez of celebrated Central, he was scouted to head the opening of Amazonico in Dubai, where he now spins Peruvian produce into gold. Take a seat among the exotic plants and Amazonian butterflies (the creations of Spanish interior designer Lázaro Rosa-Violan) and choose from the spectacular sushi menu: responsibly fished Bluefin tuna, torched king salmon and prawn tempura are all on offer, playfully presented as moriawase, nigiri, gunkan and maki. Larger dishes from the charcoal grill or wok are also crowd-pleasers.
