Papa Doble, the bar previously called The Old Man Singapore, was a new entry into The World's 50 Best Bars 2019 list at No.38, which is unsurprising given its pedigree – its Hong Kong sister was crowned Asia's Best Bar 2019. The Old Man in question is legendary writer and drinker Ernest Hemingway, with drinks made using bold flavours and cutting-edge techniques all named after his most famous works. Drinks like the Garden of Eden, which blends rotovapped honeydew rye whisky, goat milk bourbon, caramelised Sauternes cordial and orange-phosphate bitters, exemplify the bar's ideology with aplomb.
