Tokyo's influence on the Singapore bar scene is undeniable, with its importance never clearer than here at Shin Gi Tai. Overseen by Anthony Zhong who cut his teeth at Ginza's legendary Coffee Bar K, he has parlayed all that he learned into climbing the ranks of the Singapore cocktail world, including working as a founding bartender at Jigger & Pony (No.2 in Asia's Best Bars 2022) before striking out on his own at Shin Gi Tai. In classic Ginza style there's no cocktail menu to speak of, instead guests are invited to chat through their likes and dislikes with their bartender, who will create something complex and bespoke, served over hand-carved ice. There's also a prodigious selection of Japanese whiskies adorning the back bar, plus a choice of tasty bar snacks from plump gyoza to spicy mala chicken.
