The chef, who worked at Heston’s The Fat Duck, credits his mixed background – Italian, German, Brazilian and Spanish – for his cross-culture variations. The eclectic tasting menus feature the likes of acarajé (Afro-Brazilian fritters) laced in turmeric and coconut curry, and Italian risotto flavoured with Japanese yuzu kosho (chilli paste). A sleek communal marble table is designed to foster interaction and connection. As for the name, Nouri is rooted in the Latin word for nourishment.
