Dim lighting, green leather and counter seating may give Thevar the masculine informality of a sport’s bar, but the quality of the good is worlds above. Chef Mano Thevar draws inspiration from his childhood on the Malay Peninsular, travels in India and formative years spent training under French chef Guy Savoy to create flavourful, modern dishes that are lighter than traditional Indian cooking but pack an authentic punch in the spice department. A signature dish of Irish oysters topped with rasam vinaigrette and sambal oil is a homage to his grandmother’s rasam soup. Sandals and suits are equally welcome here, but thanks to its Keong Saik postcode the crowd is generally young and fun.
